You will be able to uninstall Windows XP *unless* you upgrade your partition to NTFS. Note, that you will need to redo all installs performed *after* the upgrade.

If you need some of the extra security and services provided by XP when it is running on the NT File System, you should convert. If you do not need any of the extras, then don't convert.
